Spicy Habanero Rice & Vegetables

I didn’t take many pics, but had to post the recipe because it was so delicious! Lots of spice, flavor and makes for amazing leftovers!

1 yellow onion
2 habanero peppers
8 large Chopped mushrooms
Organic Jasmine Rice
3 T Olive oil
1 1/2 t Pepper
1 t Salt
1 t Paprika

Chop your onion, habanero peppers and mushrooms. Place a pan on the stovetop and bring to medium/high heat. Add olive oil and saute onions, habanero peppers, and mushrooms. Saute until begins to soften then add salt, pepper and paprika. Saute until onions and mushrooms are browned.

While vegetables are cooking. Heat a small pot with 3 cups of water. Add in 1-2 cups of Jasmine rice. Bring water to a boil for 15-20 minutes. Bring to low heat and let rice cook with the lid on the pot.

When rice is cooked to your preference, add the rice to the vegetable mixture. Mix until ingredients are evenly spread out. Season again with paprika, salt and pepper. Simmer for 15 minutes.

Ready to serve!
