Chicken and Zucchini Alfredo Pasta

As you can see, I don’t have a picture of this dish in anything other than the pot I cooked it in. Once it was ready to serve, Tunde and I started eating immediately, no time for my usual “ready to serve” photos. I’m sure you and yours will enjoy this dish just as much! 


  • One yellow onion
  • 5 garlic cloves
  • 1 t Himalayan salt
  • 1 t black pepper
  • 1/2 t basil seasoning
  • 3 T coconut oil
  • 1.5lb chicken (your preference) – I prefer the cubed chicken from Trader Joe’s
  • Newman’s Own Pasta Alfredo Sauce
  • 1/2 cup chicken stock (optional)

img_1402Chicken Instructions:

Chop 1/4 onion, 3 garlic cloves and set aside. Heat Skilled to medium/high, add 1 T coconut oil, throw in your onion and garlic, and saute for about a minute. Add chicken and cook about 15-20 min until cooked all the way through. When chicken is about 10 min in, grab sharp knife and slice the chicken into smaller pieces. Set aside for now.

Instructions for Shell Pasta (optional):

Bring small pot of water to boil, pour in noodles, bring to high heat until cooked, drain noodles and set aside.

Alfredo Zucchini Mixture Instructions:

Heat pot to medium/high heat on stove top. Add 1.5 T coconut oil, add 1/2 onion and 3 garlic cloves. Sauté for 3-4 min. Add zucchini, salt, pepper and sauté another few minutes. Add optional chicken stock and let it simmer for a couple minutes while stirring occasionally. Add your cooked chicken, 1/2 T of coconut oil, mix and let it sit at medium/low heat for just a minute. Add in your Newman’s Alfredo sauce, cooked pasta shells and any additional basil, salt, or pepper you’d like. Stir and bring to low heat, letting ingredients cook for about 5 min. Turn off stove and let it sit and thicken for a minute. Ready to serve!
