If you’re trying to watch your calorie intake but still like to enjoy a nice helping of Saturday morning pancakes, you are in luck! These Mini Banana & Cacao pancakes go nicely with your favorite cup of coffee, a good book or your favorite Saturday morning show. I love waking up early and preparing these while my coffee is brewing.
Ingredients & Instructions:
• 2 bananas
• 1/4 cup cacao nibs
• 1 t vanilla extract
• 1 cup whole wheat flour
• 1 egg
• 1 T olive oil
• pinch of chia seeds
• Your choice of syrup
• Your choice of pancake toppings (I chose blueberries)
• Grab a bowl- peel bananas and put in bowl. Add in egg, vanilla extract and whole wheat flour. Mash the ingredients and begin to whip together until texture smooths out. Add in cacao nibs (can also mix chia seeds in or use as a topping).
• Heat and oil skillet on low heat. Place a few dollops of mixture onto pan and cook on each side slowly turning up the heat. Repeat until entire mixture is finished.
• Top pancakes with your favorite syrup, chia seeds and fresh fruit!
