Seafood, Broccoli, Cabbage and Pasta Medley

You guys – this was soo tasty, healthy and oh-so-easy to make. I made this for Tunde and I for dinner and it was a hit. As most of you know,  I come from a family of cooks, so I know this will definitely be a crowd pleaser next time the fam is in LA! Check out the recipe!

Swai and Trout Ingredients and Instructions:
I picked up the Swai and Trout from Ralph’s fresh seafood section. They seasoned with lemon pepper and butter and sealed in oven bags. All I had to do was preheat the oven to 380 degrees and bake for 25 minutes!

Vegetable Mix Ingredients & Instructions:
2 heads of fresh broccoli
1/2 head of red cabbage
1 sweet onion
2 garlic cloves
1 habanero pepper
1/2 t himalayan salt
2 t olive oil
1/2 t ground pepper

-Chop broccoli into pieces and place in bowl. Sprinkle water over broccoli and heat in microwave for 1 minute. Chop red cabbage into long slices. Heat pan to medium/high heat on stove and add 1 t of olive oil. Put diced onion and garlic in pan and saute for 3 min. Add in red cabbage and broccoli. Sprinkle in 1/2 t of ground pepper, 1/2 t of himalayan salt, 1 t olive oil, chopped habanero pepper and cook for 5-10 minutes until soft.

Pasta Ingredients & Instructions:
– 1 package of whole grain spaghetti
-Himalayan salt
-Black pepper
-1 t olive oil
Bring water to a boil and place package of whole grain spaghetti in pot. Boil for 3 minutes then bring to low heat until satisfactory. Drain pasta and place back in pot. Pour 1 t of olive oil, pinch of himalayan salt and black pepper.

Grab a plate, stack your pasta, veggies and fish and you’ve just made a delicious and refreshing dinner!
