Quick Homemade Kale Chips

There’s nothing better than feeling good and feeling good about the foods we put into our bodies. Swapping out the french fries for a side salad or opting for fruit instead of creme brulee is never easy but if done consistently can yield great results for our health. Although the sweets might taste better, truth be told, eating healthier does make us FEEL better and can lead to greater productivity and positivity in other areas of our lives. I love tortilla chips and I love Mexican food. Chips and salsa have to be what I look forward to the most when I eat Mexican Food, especially at my favorite restaurant, Toledos, in Fresno, CA! Now let’s be honest, eating tortilla chips everyday of the week isn’t realistic when striving to live a health conscious lifestyle, so I whipped up Kale Chips in order to get the crunch and seasoning that I love in tortilla chips. img_9089

This recipe is so easy, healthy and a great snack when you’re craving something salty!

Prep time:5 minutes  Cooke time:12-14 minutes

Ingredients:
•1 T Extra Virgin Olive Oil
•1/2 t Salt
•1/2 t Pepper
•1/2 t Cayenne Pepper
•3 cups of chopped Kale 

Instructions:
Preheat oven to 300 degrees and lightly oil baking sheet. Place chopped kale into mixing bowl. Pour in olive oil and sprinkle in salt, pepper and cayenne pepper. Mix together until seasoning and olive oil has properly seasoned kale. Spread kale onto baking sheet and bake in oven for 12-14 minutes. You’ll want the kale to be crunchy but not burned so keep an eye on kale when you’ve reached 10 minutes in.
