This year, it is a goal of mine to add more dishes to my weekly menu that are filled with fresh vegetables and ingredients that are good for the body! This Butternut Squash & Bacon Soup will definitely be a staple go-to! It’s pretty easy to make, a definite crowd pleaser for people that like to eat healthy food with lots of flavor and the gorgeous golden color makes it fun to eat. I also made homemade kale chips as a small appetizer and will post that recipe ASAP. This was my first time attempting butternut squash soup and I must say the result was quite delicious and TD (bae) approved!

Butternut Squash Soup Ingredients:
•1 Yellow Onion
•2 Celery Stalks
•2 Whole Carrots
•1 Granny Smith Apple
•1.5 Butternut Squash
•7 slices Applewood Smoked Bacon
•4 T Olive Oil
•1 t Salt
•1.5 t Pepper
•5 cups Chicken Broth
•Butternut Squash seeds from pit
Butternut Squash Soup Instructions:
•Chop onion, carrots, celery and place in a bowl to marinate- sprinkle with dash of salt. Peel and chop apple then set aside. Heat butternut squash in microwave for 2 minutes. Peel butternut squash and chop in half. Scoop out seeds from the pit, rinse off the flesh and set seeds aside. Finish chopping butternut squash in pieces. Place pot on stove on medium heat. Put 2.5 T olive oil in pot. Add onion, celery and carrots in pot. Add 1/2 t of salt and 1/2 t of pepper. Cook for 6 minutes. Add in butternut squash, chicken stock, apple and 1/2 t of pepper. Cook on high heat for 10 minutes then bring to low heat to simmer another 20 minutes.
• In the meantime chop bacon in small pieces and cook on pan until it has reached desired crunchiness. Pre-heat oven to 300 degrees. Take your butternut squash seeds and place on baking sheet. Pour 1 t of olive oil over seeds and sprinkle with garlic salt. Bake seeds in oven for 15 minutes
•After 30 minutes of letting soup mixture cook, transfer mixture over to blender (I used my Ninja) and add in 1/2 t of salt and 1/2 of pepper. Blend in Ninja until creamy texture appears. Place back in pot and keep on low heat while serving. Place desired amount of soup in bowl, add in preferable amount of chopped bacon and pinch of roasted butternut squash seeds. Mix together and enjoy!
